Quick Dinner recipe from JLGNF's "At Your Service" Cookbook

Rushing around the house, getting your kids to soccer practice and trying to prepare a healthy meal for your family can be quite a challenge. The JLGNF’s “At Your Service” Cookbook can help you and your family by offering delicious, quick and easy recipes that you can prepare ahead of time or on the same day. The Chicken Tetrazzini recipe on p.98 proved to a great recipe that our family will enjoy over and over again. I even used a store bought rotisserie chicken to speed up my time in the kitchen which is great way to incorporate flavor without compromising taste or quality.
Although the recipe can be used as is, I would recommend adding a bit of pepper and garlic to really enhance the flavors.
Ingredients:
1 medium onion, chopped
¾ cupped chopped green bell peppers
1 cup chopped celery
½ cup margarine
1 TBSP flour
1 Cup shredded cheddar cheese
1 10 ounce can cream of mushroom soup
2 15 ounce cans chicken broth
1 tsp. salt
½ tsp celery salt
2 ½ cups chopped cooked chicken
½ cup sliced mushrooms
½ cup slivered almonds
1 2 ounce jar chopped pimentos, drained
1 pound spaghetti, cooked, drained
1 cup cracker crumbs

Directions: Saute the onion, pepper and celery in margarine until tender. Add the flour, cheese and soup and stir to blend well. Add broth and stir until smooth. Add salt, celery salt, chicken, mushrooms, almonds and pimentos and mix well. Add spaghetti and toss to mix well. Spoon into a large baking dish. Sprinkle with cracker crumbs and bake at 400 degrees for 20 minutes. 

I joined the league after relocating here about 1 ½ years ago from Mobile, Alabama. Part of my job requires me to serve in the community and as a Pediatric ICU nurse who now teaches on-line, joining the Junior League satisfies that service component for me. Additionally, I wanted to meet other women who were interested in the same activities as me that I could learn from and ultimately gain friendships. I love the events at the JLGNF because they never feel like work. Everyone has always been so welcoming; JLGNF is a great organization to belong to.
